On day 3 of her vegan diet Nina tried the vegan kebab she shopped on day 1 and liked it better than any chicken kebab she had tried before. She also recovered from day 2 and continued her research. Currently she’s testing the recipe for hazelnut milk below- results are due tomorrow 🙂
Place 200 grams of nuts in a bowl and cover in water. Let nuts soak overnight (for at least 12 hours).
Discard water and put nuts in a blender. Purée nuts and 2 cups of hot water (not boiling) in blender on high speed for about 2 minutes until smooth. Filter through a fine-mesh, clean piece of cloth or nut milk bag (if you happen to have one) into a bowl or pitcher, pressing down on solids. The dried nut “flour” can be used for baking apparently. Thin nut milk with water and add agave nectar until it reaches desired consistency/sweetness. Keep in fridge and use within a few days.
